Ingredients:
- 2 lbs chicken pieces (drumsticks, thighs, or breasts)
- 1 cup all-purpose flour
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional)
- 1 cup buttermilk
- Oil for frying (vegetable, canola, or peanut oil)
Cooking Instructions:
- In a shallow dish, mix together the flour, garlic powder, onion powder, paprika, salt, black pepper, and cayenne pepper (if using).
- In a separate dish, pour the buttermilk.
- Dip each chicken piece in the buttermilk, then coat it in the flour mixture, pressing down to make sure it adheres.
- Heat the oil in a large skillet or Dutch oven over medium-high heat until it reaches 350°F.
- Carefully add the chicken pieces to the hot oil, being careful not to overcrowd the pan. Fry the chicken for 15-20 minutes, turning occasionally, until it is golden brown and crispy and the internal temperature reaches 165°F.
- Transfer the cooked chicken to a wire rack to drain any excess oil.
- Serve the fried chicken hot with your favorite sides.
Relevant Notes & Tips:
- For extra crispy chicken, let the coated chicken pieces sit in the fridge for 30 minutes before frying.
- Use a meat thermometer to ensure that the chicken is cooked through and safe to eat.
- Don’t overcrowd the pan when frying the chicken, as this will lower the oil temperature and result in soggy chicken.
- Use a paper towel to pat the chicken dry before coating it in the flour mixture to help the coating adhere better.
